Farmhouse Apple Cake Pudding

Erika's Farmhouse Apple Cake Pudding
Last night we had some friends round for supper and I made one of my own recipe puddings, which I call Farmhouse Apple Cake Pudding. My recipe is very simple and easy to make, and should provide 6 good servings (or more if like me you serve it at the end of a 4 course meal). It is also very versatile, being great as either a cake or as a pudding, and tasting just as good served hot or cold

Delicious on its own or with pouring cream, homemade egg custard or a really good vanilla ice cream, I like to serve it with whipped brandy cream. A great way to use up windfall apples, it also works well with pears or plums. Unfortunately I forgot to take a photo before dinner, so this meagre slice is all that was left....!


Ingredients:

750g / 1.5lb cooking apples, peeled, cored and sliced
250ml / 8fl sunflower oil or light olive oil
250g / 8oz sifted plain flour
100g / 4oz granulated sugar
50g / 2oz caster sugar
4 large eggs
Juice and grated zest of 1 lemon
2 level teaspoons baking powder
2 level teaspoons mixed spice
1 handful sultanas (optional)

Method:

1. Pre-heat the oven to gas mk 3 / 170 C (fan oven 140 C)
2. Grease a 9inch/23cm round deep-sided cake tin
3. In a large bowl, whisk the eggs and caster sugar with an electric mixer for a few minutes
4. In a small bowl, blend the granulated sugar into the lemon juice and lemon zest
5. Add the oil and the lemon & sugar mixture to the egg mixture
6. Beat with an electric mixer until all the ingredients all well mixed
7. Fold in the flour, baking powder and mixed spice
8. Spoon some of the mixture into the prepared cake tin, to cover the bottom
9. Add a layer of apple slices and a few sultanas (if using)
10. Continue alternate layers of mixture and fruit, finishing with the mixture
11. Sprinkle some more granulated sugar on top
12. Bake for 90 minutes (one and a half hours) in the pre-heated oven
13. When cooked, switch off the oven and open the door slightly, but leave the cake in the oven
14. Leave to cool. The top will be all crackly and look beautifully farmhouse made!
15. To serve warm, cover with cling film and microwave for a minute or so
16. Serve with cream, custard or ice cream
